What Mushrooms To Make a Risotto
In reality, due to time and convenience, button mushrooms or oysters from the supermarket will do fine. However, in my recipe I have used a mixture of mushrooms. In the photograph you can see four species of mushroom. They are my favourite types and traditionally, the porcini or ceps are what Italian mushroom risottos are made of.
